Sweet Potatoes with Cranberry Butter

  • Baked sweet potatoes, as many as needed
  • 8 ounces good-quality, salted butter, cold, and cut into cubes
  • 1 cup raw cranberries
  • 1 teaspoon freshly grated orange zest
  • 1-2 tablespoons honey, according to taste
  1. Keep the sweet potatoes warm while you prepare the butter.
  2. Place all remaining ingredients in a food processor and pulse until well blended. You will need to stop and press the mixture down a few times, as the butter tends to clump up.
  3. Serve right away, or refrigerate until ready to use. The butter can also be frozen for 2-3 months.
