My personal experiences with shifting to a healthier diet have been that I am much more successful when I focus on behaviors that I should add or increase, rather than those I should eliminate. I’m just more successful with the carrot than the stick (pun intended). I’m convinced that everyone could improve their health pretty dramatically just by following through on a resolution to eat at least 7-9 servings of produce per day. I know it works for me. If you are eating nutrient-dense, good carbs from lots of produce, you will not have room for the empty carbs and chemical lab experiments you would get from processed foods.
With that goal in mind for myself, I gathered up sixty recipes that are loaded with vegetables (and some fruit, too). Some of them are from my site (primarily in the main dish category, as I like to come up with creative vegetarian main dishes), but most are from other great food blogs. I’m sure you will find at least a few new things to try. Enjoy!
