This recipe makes a lovely and quick appetizer or a light dessert, and I have also been known to eat some of these as a fast lunch. I could probably live on the combo of fruit and aged cheese, and this version skips the traditional crackers, yet still works well as a hand-held nibble. This is a rare case where I prefer to use larger strawberries (smaller ones tend to have more flavor), as they work better as carriers for the filling.
If you want to keep this on the lower carb side, just omit the end drizzle of honey. I have also made these with a little bit of fresh orange juice squeezed on the top in lieu of the honey, and that is also pretty fabulous. This is not a recipe that requires specific amounts, just the basic technique.
- Large strawberries, about a pound
- 3-4 ounces crumbled blue cheese
- chopped pecans or walnuts, lightly toasted
- honey, to drizzle (optional)
- Rinse the strawberries and pat them dry. Use a knife to cut off the top side of each strawberry, leaving the stems whole. Cut out a little of the interior of each strawberry to form a hollow. (I like to freeze the leftover strawberry bits and use them in drinks or desserts)
- Stuff each berry with some of the blue cheese and some bits of pecan. Arrange all of the stuffed berries on a serving platter and drizzle with a little honey, if desired.

Since January 2012, I have lost 125 pounds! I attribute this to 1) portion control 2) healthier food choices – more vegetables and fruits, less simple carbohydrates, less fat 3) more fiber 4) more movement/exercise… etc. etc. I have always LOVED vegetables and fruit, esp. vegetables. I’ve lost 30 pounds over the last few months, because of health concerns — cut out sugar, many carbs, and worked on reducing portion size to realistic and proper sizes.
I’m a salt and crunchy eater too and am seldom tempted by sugar, so these strawberries really appeal to me. I am so inspired by your readers’ weight losses, especially Lesley’s story. She makes it sound easy but I know she must have had many, many days when it took a lot of strength to stay on task!
Since finding out I had gestational diabetes, I’ve had to really concentrate on being low carb. Having already adopted the paleo lifestyle made it easier but it’s had it’s challenges. This recipe for strawberries looks great and berries are one of the approved fruits for a low carb diet.
I’ve been following the SCD diet for three months now, it’s such a good diet, and I feel the best I have in years!
I have ulcerative colitis and the Specific Carbohydrate Diet has given me an opportunity to see a healthy future. I am hoping by abiding by the diet that I will eventually be able to get off of some of the meds I currently have to take. So fare the SCD Diet has helped me tremendously, and I believe it is teaching me a healthier way of eating and living.
The biggest change in the past year has been going Paleo. Now it’s time to transition to SCD for some serious healing.

The book looks really interesting. I have had the hardest time staying on a healthy diet in New York because there are so many delicious sweets available here. It would be nice to get back to the eating habits I had in Colorado.
