I coated the shrimp in a mixture of Saucy Mama Smoky Garlic Mustard and light mayo, then wrapped them in strips of prosciutto and baked until cooked through. The prosciutto gets a little crispy and the smoky mustard adds amazing flavor. Serve these hot as an appetizer, or pile on a big green salad for a light dinner.

Prosciutto-wrapped Smoky Garlic Shrimp
20 large, peeled and deveined, raw shrimp (about a pound)
1/3 cup Saucy Mama Smoky Garlic Mustard
1/4 cup light mayo
4 ounces thinly sliced prosciutto
Pat the shrimp dry with some paper towels so the mustard mixture will stick. Preheat your oven to 400 degrees, and spray a cookie sheet with cooking spray to lightly coat.
In a small bowl, stir together the mustard and mayo. Lightly coat each shrimp with the mixture (you can dunk each side, or use a pastry brush–I like to dunk). Wrap each coated shrimp in a strip of the prosciutto (One full piece will cover about three shrimp). Place on the prepared cookie sheet and repeat until all shrimp are wrapped. Bake for 12 minutes. Serves 8-10 as an appetizer, or 4 as a main course.
