I am a tea freak, so I don’t need an excuse to drink a nice glass of iced tea, but this really amps up the flavor and gives a light sweetness as the cubes melt. At the risk of offending a lot of people, I really despise sweet tea, so if you like your tea with a syrupy edge you will want to toss some sugar into this recipe. The sweetness of the melting fruit cubes is more than enough for my palate, but I realize this is a personal preference. To make this I blended about four cups of cubed, seedless watermelon with the juice of a fresh lime (about three tablespoons of juice in a large lime), then poured the mixture into two ice cube trays and let it freeze overnight. Brew up some tea of your choice (I used green tea), let it cool down, then pour it over a large glass full of the watermelon ice cubes. It will all melt into a delicious fruit-and-tea slushy at the end. If you want a more refined ice cube, strain the watermelon puree though a fine seize before freezing. I skipped this step and enjoyed the slushy part.
