Paletas are the Latin American version of ice pops, and they are sometimes savory, sometimes sweet, and occasionally a bit of both. The fruit versions typically include some whole fruit, rather than just the sweetened juice. Just a few basic ingredients, a blender, and some ice pop molds, and you are all set.
6 ounces fresh blueberries, rinsed
12-15 fresh mint leaves
2 tablespoons honey
1/3 cup water
Blend all ingredients until smooth and then pour into ice pop molds and freeze overnight. This will make 4-6 ice pops, depending on the size of your molds (mine are pretty small, so it made six). Any leftover blueberry mixture is wonderful mixed with club soda and ice. Really refreshing.
If you don’t have ice pop molds you can use small paper cups and popsicle sticks poked through some plastic wrap. Or, for a real adult treat, freeze the mixture in ice cube trays and put the cubes in glasses filled with club soda and a splash of rum. I could go on all day, but I have produce to eat…
