Paletas are the Latin American version of ice pops, and they are sometimes savory, sometimes sweet, and occasionally a bit of both. The fruit versions typically include some whole fruit, rather than just the sweetened juice. Just a few basic ingredients, a blender, and some ice pop molds, and you are all set.
Blueberry-Mint Paletas
6 ounces fresh blueberries, rinsed
12-15 fresh mint leaves
2 tablespoons honey
1/3 cup water
Blend all ingredients until smooth and then pour into ice pop molds and freeze overnight. This will make 4-6 ice pops, depending on the size of your molds (mine are pretty small, so it made six). Any leftover blueberry mixture is wonderful mixed with club soda and ice. Really refreshing.
If you don’t have ice pop molds you can use small paper cups and popsicle sticks poked through some plastic wrap. Or, for a real adult treat, freeze the mixture in ice cube trays and put the cubes in glasses filled with club soda and a splash of rum. I could go on all day, but I have produce to eat…

Blueberry and mint sounds like a great mix. I need to pick up some molds so I can make these ASAP!
I just bought these pop molds but mine have brown bases. I just made mixed berry yoghurt pops. I'm going to have to give yours a try. They look fantastic.
I LOVE these molds–my old set made it pretty impossible to unmold the pops, and these just peel right off. Highly recommended.
Can you share where one can order these molds?
Of course–I ordered them from Amazon.com and the name of the company is Orka. Amazon has a pretty wide range of ice pop molds in stock, with lots of fun designs.
The recipe sounds delish and I too love the mold you used. The swirling design is just so pretty.
Thank you Angela
I'm making these as soon as I get the molds! They're so lovely and I want them to be just like yours
Such pretty pops!
Love these molds – I'm going to order some!
Love that flavor combo and the molds are super cool!
My kids now want these. They are all about the pops right now, and, well, that swirly thing is pretty cool, too!
Erin, the swirly thing is way cool
