Blueberry Pistachio Bark with Two Chocolates

We are prepping for a “going away” barbecue party for our friend Michelle, and today I was working on some desserts and sides.  An easy hand-held dessert for walking-about events is chocolate bark, and it is adaptable to all sorts of fun ingredients.  For this batch I used a dark chocolate base and poured it over plump dried blueberries, shelled pistachios, and chunks of good white chocolate for a little contrast.  It turned out beautifully and it will make a nice addition to tomorrow’s menu:

For the mix-ins I used a half of a cup each of dried blueberries and shelled, roasted pistachios (unsalted).  I lined a 9 by 13 inch baking pan with waxed paper and spread them out in an even layer.

Next I coarsely chopped a 3 1/5 ounce white chocolate bar (I used Green and Black).  It is easier to chop if you chill it in the fridge for about fifteen minutes first.  I spread this out over the berry mixture.
Place the pan in the fridge while you melt the dark chocolate–this will keep the white chocolate firm so it will hold its shape.  To melt the dark chocolate, chop up 16 ounces of bittersweet chocolate and place it in a microwave-safe bowl.  Microwave on high in 30 second increments, stirring after each 30 seconds until the chocolate is smooth.  Pour this in ribbons over the chilled berry mixture and then use a spatula to gently smooth it out to cover the ingredients evenly.  Chill until firm, then use a sharp knife to cut into pieces.  This is an easy treat and the combination of the blueberries and pistachios elevates the flavors to a new level.  Enjoy!
